Deli Roast Beef Low Carb Meals
These roast beef & provolone sliders with caramelized shallots are easy and addictive! The good thing is that they're keto, low-carb and quick to make. The cheesy almond flour buns are versatile and suitable for a wide range of other dishes. Try these out for your next party, game day, or everyday lunch. Most of us don't need a fancy blog post to tell us how to make a sandwich. You grab the bread, some deli meat, a nice cheese, a few veggies, your favorite sandwich spread, and you're good! You're free to close this page now. Kidding! Please don't. One, I really like you and would love to keep in touch. Two, this isn't your everyday sandwich.
These are beefy, cheesy, roast beef and provolone sliders. There's even cheese in the delicious, herby, almond flour bun. I mean, caramelized shallots make an appearance here. One bite into this warm, fresh-from-the-oven slider and you'll be glad you stuck around. Let's get into some details because I can tell you're hungry.
What Ingredients Do I Need for these Keto Roast Beef & Provolone Sliders?
Slider Buns
- Mozzarella Cheese – shredded. I usually advocate for hand shredding your cheese, but in this case pre-shredded/bagged shredded cheese is actually perfect.
- Cream Cheese – a couple ounces of softened cream cheese
- Eggs – nothing fancy – just two large eggs.
- Almond Flour – any almond flour will do. At the moment, I'm loving this one from King Arthur's Baking.
- Baking Powder
- Water
- Italian Seasoning/Dried Herbs
- Everything Bagel Seasoning – this is optional, for topping your buns before baking. I do find that adding this gives the buns a little special "something."
- Salt – just a tiny bit, but you don't want to leave it out!
Sandwich Filling
- Shallots – we're going to caramelize these bad boys to delicious perfection. Just you wait.
- Worcestershire Sauce
- Salt
- Roast Beef – You can use whatever kind of sliced roast beef your grocer has available, or even make your own. My personal preference is to use freshly sliced roast beef from the deli instead of the pre-packaged stuff from a manufacturer. Again, this is just a preference. Use whatchu got!
- Provolone – I use smoked provolone slices. If you can only find regular provolone slices, then use that!
- Mayonnaise
- Mustard – any grainy brown mustard will do
- Red Pepper Flakes – just a tiny bit
- Hot Sauce – I'm a Louisiana gal, myself.
How to Make Keto Roast Beef & Provolone Sliders
Bun
- Preheat oven to 400 degrees F
- Place the mozzarella and cream cheese in a medium sized microwave safe bowl. I usually like to use a glass bowl for this. Microwave the two cheeses for about a minute, or until they begin to melt and become more "pliable."
- Next, you'll stir the two melted cheese together until one smooth mixture forms.
- Add the almond flour and water to the bowl and stir well until evenly incorporated into the mixture. You should not have any dry clumps of almond flour at this point.
- Stir in the eggs, baking powder, salt, and dried herbs (or Italian seasoning mix). Again, stir very well, ensuring the ingredients are evenly dispersed.
- You should now have one large mound of dough. Use your hands (yes, you're getting your hands messy) to scoop out portions of the dough, and roll into 6 to 8 even balls.
- Place them on a lined baking sheet and sprinkle the top with a bit of the everything bagel seasoning.
- Place into the oven and bake for 12 minutes; the buns should be golden brown.
- Allow the buns to cool completely before carefully slicing.
Sandwich Fillings
Caramelized Shallots
- Slice the two large shallots into thin strips.
- In a small skillet, over medium low heat, add the shallots. Allow them to cook slowly, stirring every 2-3 minutes. After about five minutes, add the salt and worcestershire sauce. Continue cooking for an additional 15 – 20 minutes or until the shallots have turned deep brown. Remember to give them a stir every few minutes to prevent sticking and burning.
Sauce
- Y'all the sauce is easy as heck, but it gives the sliders such a boost! Simply combine the mayonnaise, mustard, red pepper flakes, and hot sauce in a small bowl and mix well with a spoon. Dassit! Or should I say "that's it" for those who may not know. But if you knew, hit me up because you're my kind of friend.
Assembling the Roast Beef Sliders
So, now that everything is done it's time to throw this bad boy together. Don't worry about fancy, picture-perfect styling. Your family and guests are hungry. This is how I layer my sandwich, from the bottom to the top:
- Start with a layer of roast beef.
- Above that place a provolone cheese slice. Or two if you're feeling nasty. (In a good way)
- On top of the cheese, add a generous helping of caramelized shallots.
- Finally slather a bit of the sauce we made to the inside of the top bun and place it on top of the shallots.
- Return the sliders to the oven for about 5 minutes, or until the provolone cheese begins to melt.
Done!
Wait, I almost forgot something. If you're having guests over and you want to make it look like you've really done something other than just microwave a bunch of cheese in a bowl then do this. Grab a cocktail toothpick and a mini gherkin and stick that into the top bun. If you don't have gherkins/pickles, you can use a green olive or even a cherry tomato. Stick your pinky out as you reveal the serving platter full of delicious roast beef sliders. No one will care that they're keto-friendly either.

- 2 tablespoons Worcestershire Sauce

- 8 Provolone Cheese Slices
Instructions
Bun

Use your handsto scoop out portions of the dough, and roll into 6 to 8 even balls.

Return sliders to the oven for about 5 minutes, or until the provolone cheese begins to melt.
